One Pan Cabbage, Apple, and Sausage Stir Fry

This quick and simple one pan stir fry is a great way to use up some of those ingredients in back of your fridge. The apple, onion, and sausage pair so well together, it's such a fun blend of flavor. I don't know about you but I find that cabbage can be a hard ingredient to use all of before it goes bad because you usually get so much out of a single head of cabbage. I love cabbage with fish tacos, so this is a great recipe to follow up with later in the week to use up the rest of your cabbage.

This recipe feels like comfort food because it's warm and has the sweet bits of apple, but it's actually a pretty fresh and light meal. Another perk is that it is toddler approved! My son loves the apple bits and sausage.
One Pan Cabbage, Apple, and Sausage Stir Fry
Yield: 4 servings
Ingredients:
1 medium red onion
2 apples (I recommend varieties like honeycrisp, fuji, or gala)
1/2 head of green cabbage
1 package pre-cooked mild chicken sausage (usually around 4-6 sausages) (*see notes below for recommended flavors)
2 Tbsp butter
2 Tbsp apple cider vinegar
1 Tbsp water
1 tsp stone ground mustard
1/2 tsp salt
1/2 tsp finely chopped garlic
1 tsp maple syrup
Instructions:
Finely chop red onion and set aside.
Peel apple and chop into bite sized pieces. Set aside.
Coarsely chop cabbage and set aside.
Slice chicken sausage and set aside.
In a small cup or bowl, add apple cider vinegar, water, mustard, and maple syrup. Mix well until fully combined.
Add butter to large saucepan over medium-high heat.
Add onion to saucepan and cook until they start to turn pink and soft, usually about 3 minutes. Stir frequently.
Add apples to the onion and continue to cook until the apples start to get soft, about 5 minutes. Continue to stir to prevent from burning.
Add garlic and stir to mix with apples and onions. Allow to cook for approximately 1 minute.
Add sausage to apple-onion mixture and cook until sausage is lightly browned on both sides, stirring frequently.
Sprinkle salt over sausage mixture and stir to combine.
Pour apple cider vinegar-mustard mixture over sausage mixture and stir to combine.
Add cabbage to sausage mixture and cook until cabbage is wilted and slightly soft, stirring occasionally.
Remove from heat, serve, and enjoy.
Notes:
Each different brand of chicken sausage offers different flavor combinations. I find that milder flavors such as Garlic Andouille or Chicken and Apple work well, but try whatever you like.
