Best Chewy Gluten Free Chocolate Chip Cookies

These cookies are so good. They are crunchy on the outside and chewy on the inside just the way a chocolate chip cookie should be. If you're following a gluten free diet and have been on the search for a decent chocolate chip cookie, look no further. I've got you covered.



Gluten Free Chocolate Chip Cookies

Yield: about 2 dozen cookies


Ingredients:

2 c Bob's Red Mill 1 to 1 Gluten Free Baking Flour (or similar)

1 c butter, softened

1 c brown sugar

1/2 c granulated sugar

3 Tbsp cream cheese, softened

1/2 Tbsp vanilla

1 tsp salt

1 tsp baking soda

1 egg

2 c dark chocolate or semi-sweet chocolate chips


Instructions:

  1. Pre heat oven to 350F.

  2. Add butter, brown sugar, granulated sugar, and cream cheese to a large mixing bowl. Mix until well blended.

  3. Whisk egg and add to butter-sugar mixture.

  4. Add flour, baking soda, and salt and mix until everything is fully combined and a dough has formed.

  5. Fold in chocolate chips.

  6. Spoon dough into balls and place on a non-stick cookie sheet.

  7. Bake for about 9 minutes or until cookies are lightly golden brown on the edges.
